Pressing
Must pressing is loosely carried out with a wine-press. Failing which, the juice can be obtained in small amount by means of muslin, wringing out the juice above a large funnel. The yield is 50-55% (70-75% with a press).
You can also use a spin-dryer (watching for the soap taste!) in which the ground fruits are placed.
Make sure, when pressing, that the juice or must do not touch any metal (except stainless steel). The press, as every wine making material, must be perfectly clean and disinfected.
