Wine elaboration

The elaboration of a wine [ Beverage obtained by alcoholic fermentation of grape juice. ]  or a fruit wine [ Beverage obtained by alcoholic fermentation of various fruit juices. ]  needs several steps:

  1. Choosing the fruits.
  2. Collecting the sap.
  3. Correcting the must.
  4. Fermentation.
  5. Correcting the wine.
  6. Racking.
  7. Bottling.
  8. Sparkling wine.
  9. Keeping the wine.

Some of these steps are sometimes bypassed and the described order is sometimes modified. For example, the pressing is sometimes preceded by a racking; fermentation often starts during the cuvage...
