Mutage

The mutage consists in adding alcohol to a must [ Juice before or during alcoholic fermentation. ] , before or during fermentation with the aim to stop it. The resulting beverage is sweet (more or less depending on the moment of the mutage), strongly alcoholic (generally 18-22 GL) and well fruity. The Pineau des Charentes, the Porto are muted wines.
