Collecting the juice

Collecting the juice can be made in different ways depending on the material. We will distinguish: juicy fruits, that give readily 6-7 litres juice from 10 kg fruits; fine fruit pastes or pulpy juices, issued from juicy fruits but whose pulp is so thin that it passes through muslins (banana, strawberry...); fruits poor in juice, mainly small berries such as rowan, sea-buckthorn, hawthorn, rose hips, tree saps, flowers and leaves and flavoured juices. Some devices, steam juice extractors, are very aggressive and modify the fragrance, which is rarely admissible. We will avoid them tidily.
